gurgl carat
most event venues add the credentials afterwards. gurgl carat built the austrian ecolabel requirements into the architecture from the start. set at 1,930 metres at the head of the ötztal valley, it's far enough into the alps that the surrounding landscape is protected, the air is different, and the light changes in ways that don't happen at lower altitudes. a congress centre designed with that environment in mind, not as a constraint, but as the starting point for everything the building does.
the tarv grillhouse
the tarv sits on the harbour at vágsbotnur in tórshavn, close enough to the fish market that the best of the day's catch tends to end up on the grill within the hour. head chef wi ounsa works that immediacy against something slower: dry-aged beef sourced from galicia, scotland and nebraska, cooked over the same fire as the local catch.

fiskastykkið sits in an old house in sandavágur, on the stone-paved ground where villagers once salted and dried cod for export to the mediterranean. a glass-walled alley connects the café to úti á gjógv, a second warehouse from the same year, 1912, restored across three floors into a venue for up to 120 guests.
